La pancetta con caramello e pepe nero è Questa è una versione fusion di un piatto del Vietnam molto tradizionale.
Viene servito durante il capodanno vietnamita ed è da provare anche se può sembrare strano!

Tempo di preparazione: 4 ore e mezza

Porzioni: 4 persone

Ingredienti:
1,2 kg pancetta di maiale
1 cucchiaino cinque spezie cinesi
50gm funghi secchi (opzionale)

Per servire:
spicchi di arancio, arachidi tostate tritate e riso al vapore
Per il caramello al pepe nero
400gr di zucchero semolato
2 cucchiai di pepe nero in grani
250 ml di acqua

Preparazione
Tagliare la pelle a strisce non molto profonde. Spalmare sopra le cinque spezie, due cucchiaini di sale e un po’ di olio. Lasciare a marinare per 2 ore.
Preriscaldare il forno a 200°C. Cuocere la pancetta per 2 ore o fino a quando la pelle è croccante e la carne tenera. Tagliare a strisce di 1cm e tenere in caldo.
Per il caramello, sciogliere lo zucchero in una padella con il pepe nero e 250ml d’acqua. Cuocere sul fuoco alto fino a quando il caramello non si scurisce. Non girarlo! Aggiungere 200ml d’acqua. Con cautela. Mescolare bene e aggiungere la salsa di pesce. Assaggiare il caramello – deve essere dolce, salato e piccante allo stesso momento. Aggiungere più salsa di pesce e zucchero a piacere. Filtrare.
Mettere la pancetta in una casseruola con i funghi secchi e versare sopra il caramello. Coprire e cuocere nel forno per 35 minuti.

Servire con l’insalata di arancio e arachidi e il riso al vapore.
