Malai kofta

Tra le specialità indiane che preferisco, il Malai Kofta è un popolare piatto vegetariano composto da polpette di patate in una salsa curry densa e cremosa.

Il Malai Kofta è un piatto estremamente popolare nei menu dei ristoranti indiani di tutto il mondo e, nonostante non sia una ricetta difficile da cucinare a casa, la sua preparazione richiederà un po’ di tempo.

Tempo di preparazione: 1 ora

Porzioni: 4 persone

Ingredienti:
Per l’impasto:
1 patata bollita
½ tazza di verdure crude miste (per es: verza, cipolle, carote, cavolfiore, piselli)
un pizzico di sale
un pizzico di peperoncino
un pizzico di semi di anice
un pizzico di origano
un pizzico di coriandolo in polvere
un pizzico di garam masala*
mezzo pugno di foglie fresche di coriandolo
2 cucchiai di farina di cocco (facoltativo)
2 cucchiai di farina (abbondare se non si usa la farina di cocco)
½ uovo per amalgamare l’impasto
5 anacardi tritati
10 uvetta sultanina
1 cucchiaio di panna da cucina (o in alternativa yogurt)
Olio per friggere
Garam Masala, un mix di spezie in polvere, molto usato nella cucina indiana. Come la maggior parte delle altre spezie, potrete facilmente trovarlo nei mercati delle grandi città specializzati in alimenti da ogni parte del mondo, o nei reparti etnici degli ipermercati.

Per la salsa:
1 cipolla piccola tritata molto fine
2 spicchi di aglio tritati molto finemente
4 pomodori tagliati a cubetti
150 grammi di yogurt o panna da cucina
Una manciata di anacardi non salati
Un pezzo piccolo di zenzero tritato
½ cucchiaino di cumino
½ cucchiaino di peperoncino piccante
½ cucchiaino di curcuma
½ cucchiaino di coriandolo
½ cucchiaino di maizena per addensare la salsa alla fine
sale q.b.
olio q.b.

Preparazione

Tritare finemente le verdure fresche.
Unire tutti gli ingredienti e mischiare vigorosamente con le mani.
Creare delle palle di circa 6cm di diametro.
Se vedete che l’impasto è troppo umido, potrete aggiungere un pò di pangrattato per renderlo più compatto.
Una volta preparate le palline, passarle nella farina e farle riposare per una mezzoretta in frigo.
Porre a scaldare l’olio, e quando sarà ben caldo, cominciare a friggere le kofta.
Saranno pronte quando sono ben dorate. Scolarle dall’olio in eccesso.
Servire le kofta ben calde e coperte dalla salsa al curry.

 

Preparazione della salsa:

Soffriggere la cipolla e l’aglio, quando sono ben dorati aggiungere le spezie.
Dopo un po’ aggiungere i pomodori tagliati a cubetti e lasciarli macerare.
A questo punto aggiungere lo yogurt o la panna e gli anacardi tritati, e lasciar cuocere per un paio di minuti.

Aggiungere il cucchiaino di maizena sciolto in un po’ d’acqua e cuocere finché il tutto non abbia la consistenza di una salsa abbastanza spessa.
Aggiungere il curry alle kofta appena fritte, e lasciar riposare per un minuto.

 

Le Kofta con la salsa di panna al curry sono pronte per essere gustate.
