Tempo di preparazione: 25 minuti

Porzioni: 4 persone

Ingredienti:
6 funghi profumati
20 gr di vermicelli di soia
2 cucchiai di olio (di sesamo)
2 piccole cipolle bianche affettate
125 gr di piccoli gamberetti cotti e sgusciati
125 gr di polpa di granchio
6 uova
1 cucchiaio di salsa di soia chiara
1/2 mazzetto di coriandolo tagliuzzato
pepe macinato

Preparazione
Immergi separatamente i funghi ed i vermicelli in acqua bollente per 15′.
Sgocciolali poi tagliali a pezzetti.
Scalda l’olio in una padella antiaderente e fai rosolare i funghi, le cipolle ed i gamberetti per circa 3′.
Fuori dal fuoco, incorpora la polpa di granchio precedentemente sgocciolata e lasciata raffreddare.
In un’insalatiera sbatti le uova con i vermicelli.
Aggiungi la salsa di soia e spolverizza col pepe.
Versa il preparato in un piccolo stampo, copri e fai cuocere a vapore per circa 10′.
Disponi la frittata su un piatto di portata, ed accomodaci sopra il miscuglio di funghi, gamberetti, cipolle e polpa di granchio.
Spolverizza di coriandolo fresco e servi.
